Recipe: The Pimped Mexican

The Pimped Mexican
Traditionally the Mojito is a rum based cocktail, which makes sense because it originated in Cuba, the capital of rum cocktails. But in Mexico they use agave tequila for Mexican Mojitos. Olé!
A Mexican Mojito is usually mixed with tequila, lime, simple syrup, mint and soda water. It’s hump day so I thought I might get creative and pimp my Mojito with Dulce Vida Organic – 100% pure agave tequila from Mexico – and apple blackcurrant.
So much for my seasonal cocktails. I must confess, I’m finding the transition from summer to autumn challenging on a number of levels. Oh well, let’s sit back and pretend we’re on a beach in Cancun, shall we?

Ingredients
- 60 ml Tequila
- ½ lime, cut into wedges
- 10 mint leaves
- 10 ml sugar syrup (see note)
- 60 ml cloudy apple juice
- Blackcurrant Sparkling Water
- Garnish: apple fan
Note: to make sugar syrup, add 1/2 cup caster sugar to 1/4 cup boiling water. Stir until dissolved and cool.
Method
Add lime wedges and mint leaves to cocktail shaker. Muddle. Add ice cubes, tequila, sugar syrup and cloudy apple juice. Seal tightly and shake. Transfer content of shaker into tall glass. Top with Blackcurrant Sparkling Water and crushed ice. Garnish.
