Recipe: Strawberry Mojito
Seriously, who doesn’t love a mojito? It’s such a great cocktail, especially in summer when the more refreshing the drink the better. And with all the beautiful berries in Melbourne right now I couldn’t resist making a strawberry mojito for hump day happy hour.
- 30ml Gin
- 30ml Bacardi White Rum
- 1 fresh lime, juiced, then cut into wedges
- 3 large fresh strawberries
- 2 tsp caster sugar (dissolved in 1 tsp water)
- 10 fresh mint leaves
- 1 cup ice cubes
- Soda water
- Garnish: strawberry, lime wedge &/or sprig of mint
Add sugar, lime juice, lime wedges, strawberries and mint leaves to shaker and muddle. Add gin, rum and ice, seal tightly and shake well. Transfer to a highball glass and top with soda. Gently stir with a long cocktail spoon or swizzle stick. Garnish.
