Recipe: Peach Bellini
Here we are, New Years Eve 2015. We made it.
Right now, every bar across Melbourne is preparing for their biggest night of the year. Those having house parties are preparing to cater for guests, decorating and putting up their party lights. And City of Melbourne is getting ready to host the biggest street party of the year when the city overflows with people young to old vying for a good posi to watch the fireworks.
Whatever your plan for tonight, by this afternoon you’ll be thinking of cocktails to kick off the celebrations. And nothing says New Years like a sweet, delicious peach Bellini.
- 30ml peach schnapps
- 30ml peach puree
- ½ – 1tsp agave syrup (add to taste depending on level of sweetness desired)
- Prosecco, chilled
- Garnish: slice of fresh white peach
Add peach schnapps, peach puree, agave syrup and ice to shaker. Shake well to chill. Strain into champagne flute and top with prosecco – 1/3 peach mix to 2/3 prosecco. Garnish with slice of peach.
