Recipe: Negroni Spiced Tea

Throughout the first week of June, the Negroni is celebrated far and wide. As part of Negroni Week, licensed venues around the World will be stirring things up with their unique variation on the traditional three ingredient cocktail.

The spiced tea is designed to bring in spices from the Four Pillars Gin and accentuate notes of cinnamon, cardamom and star anise. Together with the Negroni Syrup, the pronounced flavours come together wonderfully.
Step 1: Negroni Syrup
Ingredients
- 250 ml Campari
- 250 ml Maidenii Sweet Vermouth
- 250 ml Four Pillars Gin
- 600 gm caster sugar
- Zest of ½ an orange
Method
Add all ingredients to pot. Place on stove on Medium heat. Bring to boiling point stirring, and then reduce to Low. Simmer for 30 minutes or until syrup is reduced to approximately 300 ml.
Step 2: Spiced Tea Mix
Ingredients
- 5 tsp black tea
- 3 star anise
- 1 cinnamon stick
- 6 cardamom pods, whole
- 1 tsp cardamom powder
- 1 tbs Australian honey
Method
Mix all ingredients together in container and seal. Put aside to infuse for 3 days.
Note: tea will keep for up to 4 weeks in an airtight container.
Step 3: Negroni Spiced Tea
Ingredients
- 50 ml Negroni Syrup
- 1 tsp Spiced Tea Mix
- 100 ml boiling water
- 1 orange wheel
Note: measurements are given per cup.
Method
Place tea in teapot. Add boiling water. Set aside and infuse for 5 minutes.
Add Negroni Syrup & orange wheel to teacup. Pour in tea.
