Recipe: Frozen Daiquiris

Frozen Daiquiris
It’s Australia Day. Yay for the public holiday! The tradition is B.B.Q.’s with friends and Triple J’s Hottest 100. Everywhere you look is a sea of red, white and blue, Australian flags (Made in China) draped over the shoulders of our most patriotic citizens (cough cough). So in the spirit of our national day, I’ve made frozen daiquiris in the strayan colours.
Ingredients
Base mix
- 250ml Ice
- 60ml Bacardi White Rum
- Juice of 1 fresh lime
- 1 tsp caster sugar
Strawberry Daiquiri
- Base mix
- 30ml Triple Sec
- 10 fresh strawberries
- 1 tbs lychee syrup
Lychee Daiquiri
- Base mix
- 30ml Triple Sec
- 10 pitted lychees
- 1 tbs lychee syrup
Blueberry Daiquiri
- Base mix
- 30ml Blue Curacao
- ½ punnet blueberries
- 1 tbs lychee syrup
Method
Add ingredients to blender and blitz til mix is smooth. Transfer to a container and place in freezer for 3 hours, stirring mix every 30 minutes or so. Transfer to chilled glasses with sugar rim.
Note: to sugar rim glasses, rub lime wedge around rim, then dip rim into plate of caster sugar.
