Recipe: Blueberry Coriander G&T

I guess that after visiting the Melbourne Gin Company headquarters I was feeling inspired by the colours and freshness of the countryside.
The greenery set against the blue skies got under my skin, though it was a subconscious thing. I had no idea until I looked back on these photos and thought: oh wow – someone was feeling creative.
I’m not lying saying that Melbourne Gin Company Dry Gin holds it’s own, just beautifully. It’s one of those rare gins that is completely moreish neat, so it doesn’t need all kinds of flavours added to be drinkable.
However, I didn’t feel like doing any old G&T, rather I wanted to create an inspired recipe, and something colourful it would seem.
Thinking about the flavours in the gin I considered the coriander base and the citrus notes. I felt that it needed some natural sweetness to balance the tonic, and the aroma of the coriander leaf to complement the flavour.
Who says blue and green can never be seen?
