In Italy, warm evenings call for aperitivo times. It’s a European tradition that’s been practiced for more than 150 years. And the ritual of aperitivo, which literally means “a pre-meal drink to stimulate appetite”, is catching on here in Australia.
Of an early evening, the social set in Melbourne and Sydney are relaxing with light, refreshing, bittersweet beverages. As pre-dinner drinks become the norm, palate cleansers, spritzers and aperitifs are popping up on cocktail menus around town and the humble vermouth is making a comeback.
